Delicious Chocolate Ideas for Valentine’s Day II

How many more days until alentine's Day? Not long ... have you decided what to make or give for your loved ones? Here are some astonishing, tasteful, beautiful, not to eat, but to look at, simple recipes just for you to get the idea...

Deep Chocolate Cake with a Raspberry Mousse Heart

Ingredients:

2 cups all purpose flour

1 cup cocoa powder

2 cups sugar

1 tsp. baking soda

1 tsp. baking powder

1/2 tsp. salt

1/2 cup vegetable oil

2 large eggs

2 tsp. vanilla extract

1 cup sour cream

1 cup coffee, room temperature

Directions:

Preheat oven to 350F. Grease and flour Wilton’s Tasty Fill Heart Cake Pans (cake can also be baked in two 8-inch round pans).

In a large bowl, sift together flour and cocoa powder. Whisk in sugar, baking soda, baking powder and salt.

In another large bowl, whisk together vegetable oil, eggs, vanilla extract, sour cream and coffee. Add to dry ingredients and stir until well combined and no streaks of flour remain visible.

Divide evenly into prepared pans. Batter should just cover the heart indents in each side of the Wilton pan; cake will rise quite a bit during baking.

Bake for 30 minutes, or until a toothpick inserted into the center of the cake comes out clean.

Allow cakes to cool in the pan for 10 minutes, then loosen the side with a butter knife and turn cakes out onto wire racks to cool completely.

Once cakes have cooled completely, prepare the raspberry mousse filling (recipe below). Place the bottom half of the cake on a serving plate. Spread the filling into the heart cavities of the cakes. Working quickly and carefully, turn the top half of the cake with filling over onto the bottom half of the cake, enclosing the layers of mousse inside the cake. Wrap with plastic wrap and chill for at least 2 hours to firm up mousse.

Once mousse has set, frost the cake with the cream cheese frosting (recipe below) and serve.

Store leftovers in an airtight container in the fridge.

Serves 12-14

Mini Chocolate Cheese Cake

Ingredients:

3/4 cup oat flakes

1/4 cup sugar

2 tablespoons cocoa

3 tablespoons non-hydrogenated margarine

8 oz. light cream cheese

1/4 cup sugar

1/4 cup cocoa

1 egg

2/3 cup chocolate chips

1/4 cup light sour cream (5.5% m.f.)

1 1/2 teaspoon sugar

Raspberries

Directions:

In a food processor, grind the oat flakes. Add the sugar, cacao, and margarine and blend until coarse.

Press the crust in a muffin pan.

Melt 1/3 cup chocolate chips in the microwave oven for 60 seconds. Stir. Heat another 30 seconds if necessary, until melted.

In another bowl, cream the cream cheese. Add the egg, sugar, and cacao and blend until smooth.

Add the melted chocolate chips. Blend until smooth.

Add the other 1/3 cup chocolate chips and blend.

Pour the cream cheese mixture over the crust.

Bake in a preheated oven at 350°F for 15 minutes.

Take off from the oven and let cool.

In another bowl, mix the sour cream and the 1 1/2 teaspoon sugar.

Spread over the mini chocolate cheesecake.

Garnish with the raspberries and share with the people you love!

Yield: 10 servings

White Chocolate Berry Sweet Cupcake

Ingredients:

1/2 cup butter, softened

3/4 cup sugar

2 eggs

1 tsp. vanilla extract

1-1/2 cups all purpose flour

1 tsp. baking powder

1/4 tsp. salt

1/2 cup milk

1/2 cup white chocolate, melted and cooled

1 cup strawberries, chopped

Directions:

Preheat oven to 350° F.

Sift together flour, baking powder, and salt in a medium bowl.  Set aside.

Cream butter and sugar in large mixing bowl.  Add eggs one by one, until well incorporated.  Mix in vanilla extract.

Stir flour mixture into creamed sugar mixture until well blended.

Fold in chopped strawberries.

Spoon batter into mini cupcake cups evenly.

Bake for 12-15 minutes or until toothpick comes clean when inserted through the center of the cupcake.  Make frosting to top cupcakes.  Add raspberries on top as garnish (optional)

Makes 3 dozen mini cupcakes.

White Chocolate Frosting

Ingredients:

4 oz. white chocolate, melted and cooled

1/2 cup butter, softened

1-1/2 cups powdered sugar

1/4 cup whipping cream

1 tsp. vanilla extract

Directions:

Pour all ingredients into mixing bowl and beat until smooth and thick.  Frost cooled cupcakes.

Sweet cupcakes for the sweet!

Make a box of chocolate cupcakes for your sweetheart. Our heart-shaped box is filled with mini chocolate cupcakes decorated to look like Valentine’s Day chocolates. The "chocolate truffles" are made using marshmallows dipped in melted chocolate frosting and iced with a drizzle of chocolate. The remaining confections are as easy as frosting a mini cupcake with chocolate frosting and decorating them with candy hearts, red candy corn, or any red or pink candy that happens to be your sweetheart's favorite. Valentine Brownie Pops

Ingredients:

1 brownie mix plus ingredients to prepare according to package directions

Wooden skewers, craft sticks or lollipop sticks

1 cup white chocolate chips

1 tsp. shortening

Red or pink sprinkles

Preparation:

Prepare brownie mix according to package directions. Let brownies cool completely, 3-4 hours.

Line a sheet pan with waxed paper. Use a cookie cutter to cut brownies into heart shapes.

Place heart brownies on paper-lined sheet pan. Insert wood skewers, craft sticks or lollipop sticks into brownies. Tip: If your brownie hearts are bigger than 2 inches wide, use the sturdier craft sticks. Freeze until firm, 1 hour or overnight.

Place white chocolate chips and shortening in a microwave-safe container. Heat on medium-high (70% power) for 1 minute. Stir and repeat until chips are completely melted.

Dip ends of frozen brownies into white chocolate, allowing the excess to drip off. Return to waxed paper-lined sheet. Sprinkle red or pink sprinkles over white chocolate.

Cool completely before serving.
